New Mexican Cuisine varies from Mexican Cooking as most people are familiar and Tucumcari has the spice and heat!! 

there are two hot sauces :

red and green. If you want to sound like a local you say "Christmas" for both.

Many restaurants are walkable from the Castle and others are a bit of a hike . Tucumcari is about 3 miles wide and we are in the center so nothing is much further than 1.5 miles away.
